Healthy Street Corn
Do you need a side dish for your meals this Summer (or anytime!) but one that won’t weigh you down? May I suggest this recipe for healthy/healthier street corn? Healthier as compared to typical mayonnaise and butter-laden types. This recipe still packs on the flavor into what you’d expect out of street corn.
INGREDIENTS
- 2.5 cups frozen sweet corn*, thawed (or about 4 corn on the cob) 
- 1/2 tablespoon unsalted butter, softened 
- 1/4 cup plain Greek yogurt 
- 2 tablespoons cotija cheese plus 1 teaspoon for sprinkling 
- Juice of 1 lime 
- Zest of half a lime 
- 1 teaspoon granulated garlic 
- 1/2 teaspoon smoked paprika plus more for sprinkling 
- Salt + pepper, to taste 
DIRECTIONS
- Place the thawed frozen sweet corn (or shave the corn off the cob) into a medium-size bowl. 
- In a separate small bowl, mix softened butter through salt+pepper. Combine mixture with corn and stir to combine. 
- Season with additional salt+pepper, if needed. Sprinkle with cotija cheese and smoked paprika to serve. 
Notes: This recipe is delicious served warm or cold. You could also use grilled corn on the cob and simply brush the butter/yogurt mixture directly onto the corn on the cob.
*If using frozen corn, try to find a fire-roasted version for extra flavor!
